Makes enough for 10 people
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine the listed items in a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Then, turn off the stove allowing it to cool completely. Transfer to a sealable bottle, seal and refrigerate it chilled, it will last for around four weeks.
Preparing the Batch Mix: Mix the specified spirits and syrup into one large bottle, let it rest for an hour, then filter it best through a fine cloth, so it's perfectly clear.
For serving: Add 85ml of your premix into a mixing glass containing ice, and agitate lightly for about 60 seconds to cool it down. Pour to a frosted cocktail glass or equivalent, top with some cranberries and complete it with a light spray of mandarin oil over the top.
